Located on the western outskirts of Salzburg, the Schwarzenberg Barracks in Wals-Siezenheim is the largest military base in
Austria. Covering an area of around 240 hectares and comprising approximately 40 buildings, it is home to the country’s most
modern kitchen facility for the Austrian Armed Forces. Together with the catering equipment specialist gastrototal, METAGRO realised this state-of-the-art project.
The large-scale kitchen produces around 2,200 meals per day, with the capacity to increase output to up to 3,000 portions if required. In addition to meeting on-site demand, the canteen at Schwarzenberg Barracks also supplies five other barracks within the federal state. The operation includes two finishing kitchens as well as two upstream production kitchens. Thanks to a fully digital kitchen management system, the entire facility can be run efficiently with a team of just 16 employees. Project partner: gastrototal
