METAGRO equips one of Austria’s most advanced military kitchens

More than 2,000 meals per day, a central production kitchen and two finishing kitchens – this sounds like a canteen on a truly
impressive scale. Recently, the completely new canteen at Schwarzenberg Barracks was officially opened.
Located on the western outskirts of Salzburg, Schwarzenberg Barracks in Wals-Siezenheim is the largest military base in Austria, covering around 240 hectares and comprising approximately 40 buildings. Together with the catering equipment specialist gastrototal, we realised what is now one of the most modern kitchens of the Austrian Armed Forces, including the stainless steel kitchen equipment and the entire food service area.
In this large-scale kitchen, around 2,200 meals are prepared every day, with capacity expandable to up to 3,000 meals if required. The facility does not only serve the barracks itself – the canteen at Schwarzenberg Barracks also supplies five additional military bases in the region.
The kitchen concept includes two finishing kitchens and two upstream production kitchens. Thanks to a fully digital kitchen management system, the entire operation can be run with just 16 employees.
